Saturday's Lunch Menu


My dear husband's (failed) attempt to make cupcake topping from scratch resulted in an opened box of whipping cream, still 3/4 full. And I was getting worried coz cream won't last for another week once opened. So I googled the net for pasta recipes using whipping cream and found this Creamy Shrimp Macaroni recipe. Something like the one served at Secret Recipe. And it was delicious! Of course like any other recipes I nicked off the net, I tweaked it (see my adjustments in red). Especially mat salleh's ones. Lidah tak sama beb!

Ingredients:
1/2 lb Elbow Macaroni (I substituted with penne)
2 tb Vegetable oil
3/4 lb Shrimp, shelled & deveined
1 Minced garlic clove ( I used 3 cloves to reduce the muak taste)
1 c Whipping cream (used 2 cups instead, otherwise pasta will be too dry)
1 c Sliced green onion (omitted this)
3/4 c Freshly grated Parmesan Cheese 1/4 c Finely shredded Cheddar Cheese (Instead of using 1 cup, I only used 3/4 cup with equal amounts of Parmesan, Mozarella and Cheddar)
1/2 tsp Salt (omitted this)
1 tbsp black pepper
red chili flakes or chili powder as desired (esp if you are used to eating spicy food, this helps!)

Instructions:
Prepare macaroni to package directions; drain.
In med skillet, combine oil, shrimp & garlic; cook just until shrimp is opaque.
Stir in next 6 ingredients. Cook, stirring constantly, until cheeses melt.
Add macaroni; stir until coated; heat throughly.
Serve immediately

For someone who doesn't like anything creamy, he asked, "can we serve this during Hari Raya?"

Looks good ah!

Cayenne pepper is also a solid replacement for chilli padi for western food. Try it!!
